For the first ten to twenty minutes, the temperature to be maintained is 450°F, and for the rest of the cooking time, the temperature is to be maintained at 375°F. To check whether the chicken is cooked or not, the following parameters have to be considered; golden brown skin, a juicy appearance, and the temperature of the inner portions. Once the chicken is completely cooked, the chicken must be left to rest for around ten to fifteen minutes. 


Chicken is ready, let’s dive right into the recipe for creating Roasted Black Pepper Chicken. The equipment required is an oven, a pepper grinder, a thermometer. The whole preparation time is around forty minutes. The following are the ingredients required for making a Roasted Black Pepper Chicken. 

  • 5 – 6 lb whole roaster chicken
  • 2 teaspoons of kosher salt
  • 30 – 40 black peppercorns
  • 2 teaspoon turmeric
  • 1.5 lb diced carrots
  • 1.5 lb potatoes
  • 2 lemons – juice extracted
  • 1 bunch parsley – chopped
  • 1 bunch cilantro
  • Mixed dried herbs
  • 1 lb diced onions (shallots)
  • 2 – 3 garlic cloves
  • Olive oil

Instructions to prepare Black Pepper Roasted Chicken:

  1. The oven is set to preheat at a temperature of 425°F. The chicken is placed outside to get it to room temperature. The chicken is placed on a clean sheet pan and a little bit of olive oil is applied over the chicken. 
  2. The black peppercorns are crushed using a pepper ground mixer. The freshly ground pepper is added with other spices like turmeric, mixed herbs, and salt. Mix the spices in a separate bowl. The yogurt is added to the spice blend mix. 
  3. The whole marination mixture is applied all over the whole chicken. The marination mixture is also applied to the inner parts of the chicken too.
  4. The heat is lowered to 400°F, and the marinated chicken is popped into the oven. The other vegetables like onions, carrots, garlic cloves, and potatoes are also arranged along with the sheet plate. 
  5. The whole chicken, along with the vegetables, is placed inside the oven. The temperature is maintained at a higher temperature of 450°F for around ten to fifteen minutes. For the rest of the cooking period, the temperature is reduced to 375°F. The cooking time can be layered based on the size of the chicken. 
  6. Once the chicken is completely cooked, the chicken is popped out of the oven.
  7. Now the cooking is done, and the final seasoning is done by splashing lemon juice and sprinkling the chopped cilantro and parsley. Extra oil and freshly ground black pepper are also seasoned over the chicken for extra juiciness. Your Black Pepper Roasted Chicken is ready to be served.
